Not only is Sugar Golem a fun play on the formerly-common anime trope of "unlikely half-Japanese does interesting things based on the other half" but it's also pretty much a way cuter Anpanman with less in the way of superpowers. I think when I first heard Nihon had an superhero who would give hungry people bites of his head, I fell in love with that concept. Really it all probably traces back to the Gingerbread Man.
One major inspiration was just noticing that sugar cookie dough has a similar look to skin. Giving her lighter outlines is supposed to help represent that. Only works if it's raw, though, so she jumped RIGHT out of the oven in her origin story. The last panels are a thing I came up with as soon as I posted the old drawings online. Like chatting with commenters about possible things she would do.
